Method:
1. Prepare the crust:
Preheat your oven to 325°F (163°C).
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated with the butter.
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust.
Bake for about 8-10 minutes, until golden brown. Remove from the oven and let it cool completely.
2. Make the cheesecake filling:
In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add the sugar and vanilla extract, and continue beating until well combined.

Add the sour cream, flour (if using), and salt, and beat until smooth.
3. Assemble the cheesecake:
Pour the cheesecake filling into the cooled graham cracker crust, spreading it evenly.
Tap the pan gently on the counter to release any air bubbles.
Bake the cheesecake for about 50-60 minutes, or until the center is mostly set but slightly wobbly. It may have a small crack around the edges.
Turn off the oven and leave the cheesecake in the oven for an additional 1 hour to cool gradually (this helps prevent cracking).
After the hour, remove the cheesecake from the oven and let it cool completely on a wire rack. Once cooled, refrigerate for at least 4 hours, or overnight for the best texture.
4. Make the strawberry topping:
In a small saucepan, combine the sliced strawberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the strawberries release their juices and the mixture thickens, about 5-7 minutes.
For a thicker sauce, you can add a tablespoon of cornstarch mixed with a tablespoon of water to the pan and cook for another 1-2 minutes until the sauce thickens. Remove from heat and let it cool to room temperature.
5. Assemble and serve:
Once the cheesecake has chilled, spoon the cooled strawberry topping over the top of the cheesecake.
Carefully remove the cheesecake from the springform pan, and transfer it to a serving plate.
Slice and serve the cheesecake chilled, topped with extra fresh strawberries if desired.
